Perfect Pumpkin Muffins for Fall!

Delicious Pumpkin Muffins!

We have some great things coming up for fall…to get us started and in the right frame of mind, here is a mouthwatering recipe from my delightful friend…the awesome and talented Kim Copithorne.

The air is crisper, the smell is changing, I have to wear a jacket or a light sweater, I guess that means summer is over!
Technically fall doesn’t start until September 23rd this year but honestly to us Canadians it starts on September 1st.
Our Thanksgiving is always the second weekend in October and we like to bring out the pumpkin flavored items as soon as we can. I have been searching for a really good pumpkin chocolate chip muffin recipe and so I have mixed a few together and have come up with an awesome one. In this recipe they come out super moist but are light and airy and not dry at all. My sweet little three year old daughter loved helping to make them, and eat them.

Muffin Heaven!

Ingredients:

4 Eggs
2 Cups of sugar
15 ounces of pumpkin puree (packed in tight)
1 1/2 Cups of canola oil
3 Cups of all purpose flour
2 Teaspoons of baking soda
1 Teaspoon of baking powder
1 Teaspoon of cinnamon
1/2 Teaspoon of nutmeg
1/2 teaspoon of ground ginger
2 cups of milk chocolate chips

Directions:

Preaheat oven to 400F, line your cupcake tin with paper liners and set aside.
In a large bowl mix the eggs, pumpkin puree, oil and sugar until well combined.
In a medium bowl mix all the dry ingredients together and add to the wet ingredients a little bit at a time.
Make sure there are no dry spots in the batter by making sure everything on the bottom is stirred up as well.
Mix in the chocolate chips in by folding gently.
Fill the lined muffin cups with 1/4 cup of the batter in each cup.
Bake for approximately 15 minutes, insert a toothpick in the center of the muffin and see if it comes out clean.
You don’t want to over bake them because otherwise they don’t get that amazing moist texture.
When done cool on a rack and then enjoy!
This makes about 2 dozen
