You must all surely know by now that I love fall and I love to bake. So basically baking in the fall is the purest form of baking perfection I will ever know. I am also spice lover and my favorite trio is cinnamon, allspice, and nutmeg. Just the mention of those 3 spices and my mouth begins to water. Add some pumpkin and whoa mama! I can’t get my mixing bowls out fast enough.

Ahhh, good old Chocolate Chip Pumpkin Bread from Our Best Bites. I made this bread last week and threw in about 1 1/2 cups cinnamon chips because YOLO and CINNAMON CHIPS! It was amazing!
Our very own Marianne sent me this recipe for pumpkin chocolate chip cookies, asking if it was too simple to be featured. I asked if it was yummy and she said yes, so I asked what was the problem? Easy and yummy?! That’s pretty much what women everywhere are looking for. Thank you Marianne. Just thank you.
Ingredients
- 1 box Spice Cake Mix
- 12 oz. bag of Chocolate Chips
- 15 oz. can pure pumpkin
Instructions
- Preheat the oven to 350 degrees.
- Stir the cake mix and pumpkin together in a bowl.
- Add chocolate chips to preference. I don't always use the whole bag.
- Form cookie dough into a ball and place on well greased cookie sheet.
- Bake for 15 minutes.
- *should yield 3 dozen cookies
I love that these recipes not only contain pumpkin, but use pumpkin in unusual ways so that you can eat pumpkin all day long! Happy baking season my friends.
