School is out. Summer is here. While that means many a trip to the park or local swimming pool, it also means making 3 meals a day. Darn you lunchtime, that pesky meal that cramps our carefree, summer style. Well, go ahead and cry, and stomp your feet, and shout, “BUT I DON’T WANT TO!” And after you realize you don’t have much of a choice, I recommend you create a 2 week rotating lunch menu.
I have found that a 2 week rotating lunch menu works perfectly in the summer. Enough variety to not get tired of the same thing, but regular enough to not leave you feeling overwhelmed. Listed below are some ideas to incorporate into your 2 week rotating summer lunch menu.
- Homemade Bagel Bites (check back this week for a recipe)
- Baked ham and cheese crescent rolls
- Macaroni and cheese
- Caesar salad in pita pockets (add cooked diced chicken or bacon to add extra yummy flavor)
- Quesadillas
- 7-layer dip with chips
- Grilled cheese sandwich and tomato soup
- Italian Layer Bake
- Tacquitos with sour cream and guacamole for dipping
- Turkey BLT wrap
- Homemade corn dogs
- Pasta Salad
- French Dips
- Muffin tin lasagna
- Homemade Chick Fil-A Bites
- Grilled Hot Dogs and/or Hamburgers
- Nachos
- Waffles with fruit
- Baked Cheese Ravioli
- Your usual variety of sandwiches, PB & J, PB & honey, meat & cheese
Now, you should be armed and ready to bust out those summer lunches like a boss!
